Homemade Pesto Sauce

Since I brought you some of the classic Italian tomato sauce yesterday, I figured today I would feature some pesto sauce.  Very simple to make and just as easily goes with almost any meal.  You can use it as a dip, spread it on any protein, or use it as a pasta sauce.

Homemade Tomato Sauce

Columbus Day is on Monday, October 10, and Nassau Happening is bringing you some Italian recipes to honor Cristoforo Colombo (Christopher Columbus to most). Since the basis of many Italian meals is tomato sauce, here is a recipe for truly homemade sauce. Forget about the jar, or even the can. Here is how you can make your own sauce that can, depending on how much you make, last you a looong while. The pictures you see made about 150 jars of sauce (more than a year’s worth!), but you can definitely do it on a much smaller scale. You just need some time, patience, and maybe a few extra hands in the kitchen. Try it in the next few weeks before beautiful tomato season is over, and enjoy…over and over again! (more…)

How To Make The Best Guacamole

It’s August, which means summer is inching it’s way to a close.  There are still a few weeks left to enjoy the weather and some alfresco dining, and one dish that will make your meal a hit is some homemade guacamole.  I made this once for a group of friends, and it got rave reviews.  All of them have the recipe now, and they make it all the time.  So now I am sharing it with you.  Credit goes to my sister, Lori, who, even though we both follow the same list of ingredients, still has the best bowl of guac I have ever tasted.
